Vegetable Tian Ingredients

When preparing to make your tian, look for veggies that are all of similar diameter and then slice them as uniformly as possible. This will ensure that all the vegetables cook evenly. Use a mandoline ONLY if you are comfortable and familiar with safely using one. Otherwise, a good knife and some diligence will do the job just fine ! 

  • 3 medium tomatoes cut into 1/4-in. slices 
  • 2 large yellow squash cut into 1/4-in. slices 
  • 1 large zucchini, cut into 1/4-in. slices 
  • 1 small yellow squash, cut into 1/4-in. slices 
  • 1 teaspoon kosher salt, divided 
  • 1/2 teaspoon black pepper 
  • 1/3 cup extra-virgin olive oil 
  • 1 garlic clove, grated or minced
  • 3/4 cup of Parmesan cheese, finely shredded

 

Vegetable Tian Directions

  • Preheat oven to 400ºF.  After slicing your veggies, lay them out on a baking sheet or cutting board and salt them all as evenly as you can with 1/2 teaspoon of the salt. 
  • Arrange your vegetable slices upright and in an alternating spiral pattern in a lightly greased 2 1/2-quart baking dish. Work on the outer layer first and then work your way into the middle (think of a knocked over spiral line of dominoes). Sprinkle the dish with pepper and the remaining 1/2 teaspoon salt.
  • Whisk the olive oil and garlic together and drizzle the mixture evenly over the tian. Then, sprinkle the Parmesan cheese evenly over the top.
  • Bake the dish in a preheated oven until the cheese is lightly golden in color and the vegetables are tender. A good sign that the dish is done is when your vegetable tops begin to char. The dish should cook about 25 minutes.

*** If you have fresh herbs on hand - feel free to sprinkle some basil, thyme, or even fresh sliced chives on top when you take your tian out of the oven !
